Litti and Baigan Ka Chokha

Litti and Chokha is among the most common and most appreciated combination of food in Bihar and Jharkhand. It is easy to prepare but has flavors that are long lasting

Ingredients for Chokha

  • 2  large size Brinjal (Eggplant)
  • 2 Green Chilies
  • 8 Garlic Cloves
  • 4 tsp Mustard Oil
  • 1 Lemon
  • 1/2 Chopped Onion and Coriander Leaves (For Garnish)
  • Salt (to taste)

Ingredients for Litti

  • 1/2 Kg Wheat Flour
  • 250 gms Bengal Gram Flour (Sattoo)
  • 2 tsp Ghee (Clarified Butter)
  • 1 tsp Mustard Oil
  • 1/2 tsp Carom Seeds (ajwain)
  • 4 Green Chilies (ground to paste)
  • 8 cloves of Garlic (ground to paste)
  • 1/3 tsp Samal Fennel (kalonji / mangraila)
  • 2 Onions (finely chopped)
  • Salt (to taste)
  • Oil to fry
  • Water

Method for Choka

Step 01

Cut the brinjal (eggplant) into four pieces and roast them on tawa/fry pan on low flame for 20 minutes by tightly covering with lid. Now peal out the upper burned layer in cold water (as cold water facilitates in removing the outer layer easily).

Step 02

Slightly  roast garlic and green chilly on tawa.

Step 03

Now grind the roasted brinjal (eggplant) along with garlic and chilly into a rough thick paste. Add oil and salt according to taste. To this add few drops of lemon juice. Mix it well

Step 04

Garnish it with chopped Onions and Coriander leaves

Method for Litti

Step 01

In a bowl, add 2 tsp of Ghee (Clarified Butter) and Samal Fennel (kalonji / mangraila) into the Wheat Flour. Add a small tsp spoon of salt and mix them them well by using both hands. Add water and prepare a soft dough.

Step 02

In another bowl, add the garlic paste and green chili paste to the Bengal Gram Flour (sattoo). To this add Carom Seeds (ajwain) and 4-5 drops of Mustard Oil along with the chopped onions and salt (to taste). Mix them well.

Step 03

To the dough prepared in step 1, make small balls. Take a wheat ball and press with your hands to make it flat. Press it in the middle to form a cup shape and add 2 tsp of mixture prepared in step 2. Cover the mixture by enclosing the dough ball from the sides. Gently roll it into an elliptical shape. Repeat the same process to make more stuffed balls.

Step 04

When the balls are ready, deep fry them in oil in a heavy bottom pan. Remove the Litti into a dish

Hot and delicious Litti and Baigan ka Chokha is ready to serve.
