An innovative dish that utilizes any left over Dal and Rice from last evening. Surely you can make it by preparing fresh Dal and Rice. But the flavors are very different from the usual rice and dal.
- 1 bowl of fully cooked Rice
- 4 bowls of fully cooked Dal (arhar dal)
- 1 Onion (finely chopped)
- Paste of 8 Garlic Cloves and 2 Green Chilies
- 1/2 tsp Turmeric Powder
- 1 tsp Lemon Juice
- 6 tsp Ghee (Clarified Butter)
- 1 tbsp Refined Oil
- Salt to taste
Heat oil in a deep frying pan and add the finely chopped onions. Fry the onions to light brown and add the garlic and green chili paste, turmeric powder, salt (to taste) and 1/3 cup of water. Fry the masala well for 5 minutes
To this add the fully cooked boiled rice, Dal and 8 cups of water. Mix it well. Add lemon juice. Mash the rice with a spoon to make the gravy thick
As the mixture gradually thickens, add 2 tsp of ghee (clarified butter) and cook on medium flame for 4-5 minutes.
Delicious Khatua is ready to serve. Take it out in a bowl and add more ghee to increase flavor. Garnish with onion rings, lemon and chili.
